Tasting is an Art! 4

Of all the culinary treasures I savor, none is more carefully crafted than my wine and cheese pairings. To find the perfect pairing that is just right is indeed a yummy undertaking!


Things to consider would include texture, acidity, fat and tannin. And do you want a cheese to come from a similar terroir?


There are basically four groups of cheeses:

creamy

hard

blue

fresh (often soft and spreadable with no aging)


Think about your own food preferences. Do you prefer flavor blends that complement one another, or contrasting blends? A lush wine typically goes well with a triple-cream cheese, while a more acidic wine will cut the sweetness of that cheese. Go carefully with a blue.


After noting the texture and aroma of the cheese, taste the cheese by itself first. Then take another small bite with a sip of wine. Let the two gel together in your mouth. One should not overwhelm the other.


Like the pairing after that all important second taste, move on to another wine with a different cheese. And yes, you are looking for a cheese which complements that wine you so lovingly chose.
